MY FIRST RECIPE IN ENGLISH -A SUPERB SANDWICH BREAD

THIS RECIPE IS DEDICATED TO MY ENGLISH CLASSMATES AND MY TEACHER MARIA.



ONION & ROSEMARY FOCACCIA


INGREDIENTS


DOUGH


20g olice oil


600 g bread flour


30 g fresh yeast crumbled


380 g water


1 TPS  salt


TOPPING


40g extra virgin olive oil


40g water


1 1/2 tps salt


Handful rosemery sprigs.


300-350g onions cut in halves


PREPARATION


DOUGH


1.-Line a baking tray approx 40cm x35 cm) with baking paper and grease the baking with 2 tbsp olive oil.Set aside.


2.-Place bread flour ,fresh yeast,water,20g olive oil,sugar and salt un mixing bowl and Knead 3 min /Dough mode.


3.-Using oiled spatula transfer dough to prepared baking tray with oiled hand,from dough into a round shape and cover with a thin coating of olive oil.Cover dough with a large bowl or cling film and allow to rise in a warm place until doubled in size(appox 1 hour).


Meanwhile ,preheat oven to 220º.


4.Without Kneading the dough any further,spread it out with oiled finger tips into a rectangle the size of the baking tray and set tray aside.


TOPPING


5.-Place extra virgin olive oil,water and salt in mixing bowl and emulsify 10sec/speed 4.


6.-Add onions in mixing bowl ,chop 6 sec/speed 4 ,then cook 10min/100º


forward/reverse Knife movement ,Speed 1.


Spread onions on top of dough and scatter with rosemary ,bake for 20-25 minunes(220º) or until golden brown .Allow to cool before cutting into squares and serving.


TIPS


The dough is quite wet but keeping its surface well oiled prevents it from sticking to fingers.


Use scissors to cut focaccia in squares.
